My Favorite Recipe: Fettucine Alfredo!!

Looking for an easy recipe that your family will love?  This one is always a hit in our house!

My Family’s Fav Fettucine ‘Fredo


this particular recipe serves about 12. I have 7 people, I need to make a HUGE amount.

2-2 1/2 pounds Fettucine noodles (prepared as per the instructions)
1 1/2 cup butter
approx 15 cloves chopped garlic
3 c. heavy cream (see, told you it’s fattening)
3 egg yolks
6 cups fresh parmesan cheese
1/2 c. dried parsley
Optional: mushrooms, garlic shrimp or chicken to add into the mix…so YUMMMMMMY!

Bring a large pot of lightly salted water to a boil. Add fettucine pasta and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet melt the butter and add the chopped garlic. Cook on low for about 5 minutes. Stir often and try not to burn the garlic.
Pour about a 1/4 cup of the heavy cream into a smallish bowl and add the egg yolk. Beat together; put aside.
Pour the remaining cream into the frying pan on medium high. Mix rapidly with whisk as cream boils. Slowly add the cream/egg mixture because you don’t want the egg to curdle! Whisk until well blended.
Add 1 cup of the Parmesan cheese and continue to mix the cream.
Pour in the remaining Parmesan
Add the parsley
Mix until smooth.
Immediately remove from stove.
Serve over cooked pasta.
Garnish with fresh parsley.

Have some wonderful, crusty bread alongside it.

And don’t forget to eat your veggies (to counteract the fattening part)
